Sweet Potato Summer Curry

You know those make shift meals where you use ingredients in your kitchen that are all separate things, but end up making a bomb meal with them? This sweet potato met my taste bud needs this past week. Plus, it was boy-friend approved! 

The main ingredients int he recipe are sweet potato, garbanzo beans or chickpeas, and cauliflower. These three items combined all provided enough fiber which kept us full and satisfied. It had complex carbohydrates from the sweet potato, lots of fiber from the cauliflower, and protein from the beans! 

It's a one-pot meal that is sure to meet your taste buds needs. Which means easy cooking method, quick clean up, and cooks in less than hour. YAY Please check out my recipe below: 

Sweet Potato Summer Curry

Ingredients: 

  • 1 large sweet potato, cubed
  • 1 bag of pre-chopped cauliflower rice 
  • 1 can of garbanzo beans, drained
  • 1/2 tsp allspice
    • 1/2 tsp tumeric
    • 1/2 cup almond milk or other non-dairy milk 
    • 1/2 jalapeno, finely diced with seeds
    • salt, to taste
    • pepper, to taste 
    • 1 bottle of Fawen Drinkable Soup ( Sweet potato and red lentil flavor)  note: you can also try this soup, or this one  

 

Directions: 

  1. Heat skillet to medium heat. Add sweet potato to pan with 2 tbsp olive oil. Allow to cook until starting to soften.
  2. Once starting to brown over, add cauliflower to pan with 1/2 cup of water to allow vegetables to soften further. Stir veggies together
  3. Then add garbanzo beans, almond milk,  and soup to mixture. Allow ingredients to absorb the soup for a few minutes
  4. When mixture starts to soften, add jalapeno and spices. Let all ingredients cook together for 5-10 minutes. If liquid starts to absorb, add water to desired consistency (I like there to be extra curry sauce. 
  5. Once done, serve warm. The curry is also good for leftovers!

This recipe is about 5-6 servings!

Add the diced jalapeno, once you see all vegetables and beans starting to absorb the soup's color.  Add rest of seasonings at same time.

A few great things about this recipe was that the sweet potato with the garbanzo beans made it super filling! The cauliflower rice kept the meal light and nourishing. The orange-y yellow color of the color and was appealing to the senses. When taste, texture, smell, appearance all meet my needs, I am a happy camper.
